Makes it so easy to take the crockpot in the car, and not have to worry about the lid coming off during the drive. I love using this slow cooker that has a locking lid. This is certainly not a diet dish, but it works well for potlucks and other special events.
It saves space in your oven for other dishes. Since it’s made in the crockpot, this Broccoli and Rice Casserole recipe is great for when you’re hosting a big holiday dinner. This recipe is fast and easy, and it’s made in a slow cooker. But, while it’s delicious, that recipe requires quite a few ingredients and time in the oven. It’s so warm and hearty, the perfect comfort food! Remove the rice from the heat and set aside. Simmer on low until all the liquid is soaked up- about 30 minutes.
Add the rice, cover, and reduce the heat. This dish is great any time of year, but I really love it during the cold months. Spray a 3 or 4 qt casserole dish with non-stick cooking spray. Heat 20 seconds more, or until easily spreadable. (Side note: you can use fresh broccoli, but you’ll need to add a little water.) Remove lid and heat Cheez Whiz (right in jar) in microwave for 30 seconds, stir. Place in pre-heated oven for 25-30 minutes, until bubbly. Pour broccoli mixture into 9 x 13 greased dish and top with remaining Cheez It crackers. Fold 1/2 of crushed Cheez It's into broccoli mixture. Drain broccoli very well and mix with soup mixture.
